Ingredients
Meat and Vegetables
- 1 lb ground beef or Italian sausage
- 1 onion, diced
- 3 garlic cloves, minced
Liquids and Seasonings
- 1 can crushed tomatoes (approximately 14 oz)
- 4 cups beef broth
- 1 tsp Italian seasoning
Pasta and Cheese
- 6 lasagna noodles, broken into pieces
- ½ cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Grated Parmesan cheese, for topping
Instructions
- Brown the Meat: In a large pot or Dutch oven over medium heat, brown the ground beef or Italian sausage along with the diced onions and minced garlic until the meat is fully cooked and the onions are translucent. Drain any excess fat.
- Add Liquids and Seasoning: Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring the mixture to a gentle boil.
- Cook Pasta: Add the broken lasagna noodles to the pot. Reduce heat to a simmer and cook for 12–15 minutes, or until the noodles are tender and cooked through.
- Add Cheese and Serve: Stir in shredded mozzarella cheese until melted and incorporated. Serve the soup hot, topped with a dollop of ricotta cheese and a generous sprinkle of grated Parmesan. Optionally, garnish with fresh herbs such as basil or parsley.

- For extra richness and a twist, use tortellini instead of broken lasagna noodles.
