Ingredients
Filling
- 2 cups cooked, shredded chicken
 - 4 oz cream cheese, softened
 - 1 cup shredded cheddar or pepper jack cheese
 - 2 jalapeños, seeded and diced
 - 2 tbsp chopped green onion
 
Quesadillas
- 4 large flour tortillas
 - 1 tbsp butter or oil for cooking
 
Instructions
- Prepare filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar or pepper jack cheese, diced jalapeños, chopped green onion, and cooked shredded chicken. Mix thoroughly until all ingredients are evenly blended creating a creamy, spicy filling.
 - Assemble quesadillas: Lay each flour tortilla flat and spread the chicken and cheese mixture evenly over half of each tortilla. Fold the other half over the filling to form a half-moon shape, sealing the quesadilla.
 - Heat skillet: Place a skillet or frying pan over medium heat and add butter or oil. Allow it to melt and coat the surface for even cooking.
 - Cook quesadillas: Place one folded quesadilla in the heated skillet and cook for 2 to 3 minutes on one side, until the tortilla turns golden brown and crispy. Carefully flip and cook the other side for another 2 to 3 minutes, until the cheese inside is melted and filling is heated through.
 - Serve: Remove quesadillas from the pan and let cool slightly before slicing into wedges. Serve warm with ranch dressing or salsa for dipping.
 
Notes
- For extra heat, leave some jalapeño seeds in the filling or add a dash of hot sauce to the mixture.
 - Use pepper jack cheese for an extra spicy kick.
