Description

Tender and flavorful beef pot roast cooked in an Instant Pot with caramelized onions, garlic, and a rich beef broth, inspired by the classic French onion soup. This meal delivers deep, savory flavors in a fraction of the time of traditional braising.

Ingredients

Main Ingredients

  • 3 lb beef chuck roast
  • 2 onions, sliced
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Sauté Onions: Set the Instant Pot to sauté mode. Add a small amount of oil and cook the sliced onions, stirring frequently, until they are golden brown and caramelized. Once done, remove onions and set aside.
  2. Sear the Roast: Season the beef chuck roast generously with salt and pepper. Place it in the Instant Pot and sear on all sides until browned, about 3-4 minutes per side, to develop flavor.
  3. Add Ingredients for Pressure Cooking: Return the caramelized onions to the pot around the roast. Add minced garlic, beef broth, Worcestershire sauce, and dried thyme. Stir gently to combine without losing the sear on the meat.
  4. Pressure Cook: Close the Instant Pot lid and set valve to sealing. Cook on HIGH pressure for 60 minutes. After cooking, allow the pressure to release naturally for about 10-15 minutes before carefully releasing any remaining pressure.
  5. Serve: Remove the roast and shred or slice it. Serve with the onion and broth sauce spooned over. Pair with mashed potatoes, crusty bread, or your preferred sides.

Notes

  • Serve with mashed potatoes or crusty bread for a complete meal.
  • Add sliced mushrooms during the sauté step for an extra layer of flavor.
  • This dish is great for meal prep and freezes well for future meals.
  • For gluten-free option, ensure Worcestershire sauce is gluten-free or substitute with tamari.
