Instructions

  1. Sauté Onion and Garlic: Set the Instant Pot to sauté mode and add a small amount of oil. Add the diced onion and minced garlic, cooking until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Add Broth, Seasonings, and Tortellini: Pour in 4 cups of broth, stir in 1 teaspoon Italian seasoning, salt, and pepper to taste. Add the cheese tortellini to the pot, ensuring they are submerged in the liquid.
  3. Pressure Cook: Secure the lid and set the Instant Pot to cook on HIGH pressure for 3 minutes. Once the cooking cycle completes, carefully perform a quick release of pressure.
  4. Finish with Cream and Spinach: Open the lid and stir in 1 cup heavy cream followed by 2 cups fresh spinach. Allow the spinach to wilt in the residual heat and blend the creaminess with the soup.
