Ingredients

Vegetables

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium zucchini, chopped
  • 2 medium potatoes, peeled and diced
  • 2 large tomatoes, chopped

Other Ingredients

  • 4 cups vegetable broth
  • ½ cup quinoa, rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt to taste
  • Freshly ground black pepper to taste


Instructions

  1. Sauté vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened and fragrant.
  2. Add remaining vegetables and liquids: Stir in chopped zucchini, potatoes, and tomatoes. Pour in the vegetable broth and add the rinsed quinoa. Mix in the thyme, oregano, salt, and pepper.
  3. Simmer stew: Bring the mixture to a gentle boil, then reduce heat to low and cover the pot. Let it simmer for 20–25 minutes, or until the quinoa is cooked through and the vegetables are tender. Stir occasionally to prevent sticking.
  4. Adjust seasoning and serve: Taste the stew and adjust salt and pepper as needed. Serve hot as a nutritious and comforting meal.
