Ingredients
For the Soup:
- 2 tbsp olive oil
 - 1 onion, diced
 - 2 carrots, diced
 - 2 celery stalks, diced
 - 3 cloves garlic, minced
 - 1 1/2 cups dry lentils (green or brown), rinsed
 - 6 cups vegetable broth
 - 1 tsp cumin
 - 1/2 tsp smoked paprika
 - Salt & pepper
 
For Garnish:
- Fresh parsley, for garnish
 
Instructions
- Sauté Vegetables: In a pot, sauté onion, carrots, celery, and garlic in olive oil until softened.
 - Add Ingredients: Stir in lentils, broth, cumin, and paprika. Bring to a boil.
 - Simmer: Reduce heat and simmer for 30–35 minutes, or until lentils are tender.
 - Season and Serve: Season with salt and pepper, garnish with parsley, and serve hot.
