Description

Ingredients

For the Soup:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups dry lentils (green or brown), rinsed
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt & pepper

For Garnish:

  • Fresh parsley, for garnish


Instructions

  1. Sauté Vegetables: In a pot, sauté onion, carrots, celery, and garlic in olive oil until softened.
  2. Add Ingredients: Stir in lentils, broth, cumin, and paprika. Bring to a boil.
  3. Simmer: Reduce heat and simmer for 30–35 minutes, or until lentils are tender.
  4. Season and Serve: Season with salt and pepper, garnish with parsley, and serve hot.
