Description
Guinness Beef Stew is a rich, hearty Irish-inspired dish made with tender chunks of beef, vegetables, and a generous pour of Guinness. Slow-cooked to perfection, it’s ideal for cold weather and comforting meals.
Ingredients
- 2 lbs beef chuck, cut into 1.5-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 tablespoons all-purpose flour
- 1 (14.9 oz) can Guinness Draught
- 3 cups beef broth
- 4 large carrots, sliced
- 3 large potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the beef cubes with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat and brown the beef in batches. Remove and set aside.
- In the same pot, add onions and cook until softened, about 5 minutes. Add garlic and cook for another 1 minute.
- Stir in tomato paste and cook for 2 minutes. Sprinkle in flour and stir well to coat the vegetables.
- Gradually pour in the Guinness, scraping up browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.
- Return the beef to the pot, then add the beef broth, carrots, potatoes, celery, thyme, rosemary, and bay leaves. Stir to combine.
- Bring to a simmer, cover, and reduce heat to low. Cook for 2 to 2.5 hours, or until the beef is fork-tender and the stew is thickened.
- Remove bay leaves, adjust seasoning with salt and pepper, and garnish with fresh parsley before serving.
Notes
- For best flavor, use a quality cut of beef with good marbling, like chuck roast.
- This stew tastes even better the next day after flavors have melded.
- You can cook this in a slow cooker on low for 8 hours or in the oven at 325°F (163°C) for about 2.5 hours.
- Serve with crusty bread or mashed potatoes for a complete meal.
