Description

Guinness Beef Stew is a rich, hearty Irish-inspired dish made with tender chunks of beef, vegetables, and a generous pour of Guinness. Slow-cooked to perfection, it’s ideal for cold weather and comforting meals.


Ingredients

  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 1 (14.9 oz) can Guinness Draught
  • 3 cups beef broth
  • 4 large carrots, sliced
  • 3 large potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef cubes with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat and brown the beef in batches. Remove and set aside.
  2. In the same pot, add onions and cook until softened, about 5 minutes. Add garlic and cook for another 1 minute.
  3. Stir in tomato paste and cook for 2 minutes. Sprinkle in flour and stir well to coat the vegetables.
  4. Gradually pour in the Guinness, scraping up browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.
  5. Return the beef to the pot, then add the beef broth, carrots, potatoes, celery, thyme, rosemary, and bay leaves. Stir to combine.
  6. Bring to a simmer, cover, and reduce heat to low. Cook for 2 to 2.5 hours, or until the beef is fork-tender and the stew is thickened.
  7. Remove bay leaves, adjust seasoning with salt and pepper, and garnish with fresh parsley before serving.

Notes

  • For best flavor, use a quality cut of beef with good marbling, like chuck roast.
  • This stew tastes even better the next day after flavors have melded.
  • You can cook this in a slow cooker on low for 8 hours or in the oven at 325°F (163°C) for about 2.5 hours.
