- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- Salt & pepper, to taste
- 1 cup shredded Gruyere cheese
Instructions
- Preheat Oven: Set your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the filling.
- Caramelize Onions: Heat olive oil and butter in a skillet over medium heat. Add the thinly sliced onions and cook gently, stirring frequently, for 15–20 minutes until they turn soft, sweet, and golden brown.
- Sauté Mushrooms: Add the finely chopped mushrooms along with thyme, salt, and pepper to the caramelized onions. Continue cooking until the mushrooms are tender and any moisture has evaporated, about 5–7 minutes.
- Prepare Puff Pastry: Cut the sheet of puff pastry into small squares, roughly 2×2 inches, and gently press each square into a mini muffin pan cup to form little pastry shells.
- Fill Pastry Cups: Spoon the mushroom and onion mixture evenly into each puff pastry shell, then top each with a generous amount of shredded Gruyere cheese.
- Bake: Place the mini muffin pan in the preheated oven and bake for 12–15 minutes, or until the pastry is puffed, golden, and the cheese is melted and bubbly.
Notes
- For a shortcut, use mini phyllo cups instead of making your own from puff pastry.
