Description

Hearty and comforting ground beef and cheese enchiladas baked to perfection with a flavorful enchilada sauce. This easy Mexican-inspired dish combines seasoned ground beef with melty cheese, all wrapped in soft flour tortillas and baked until bubbly, making a satisfying dinner for the whole family.

Ingredients

Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup shredded cheddar or Monterey Jack cheese

Enchiladas

  • 8 flour tortillas
  • 1 cup enchilada sauce
  • Additional shredded cheese for topping (about ½ cup)

Instructions

  1. Preheat the oven: Set your oven to 375 °F (190 °C) to warm up while you prepare the enchiladas, ensuring even baking later.
  2. Cook the ground beef: In a skillet over medium heat, brown the ground beef until fully cooked, then mix in the taco seasoning according to the packet instructions, stirring well to combine all the flavors.
  3. Assemble the enchiladas: Lay out each flour tortilla and spoon a portion of the seasoned beef onto the center. Sprinkle with a generous amount of shredded cheese, then roll the tortilla tightly and place it seam-side down in a baking dish to keep everything secure during baking.
  4. Add the sauce and cheese: Pour the enchilada sauce evenly over the rolled tortillas, making sure each one is well coated. Sprinkle the top with the remaining shredded cheese to create a delicious, melty crust.
  5. Bake until bubbly: Place the baking dish in the preheated oven and bake for about 20 minutes, or until the cheese on top is melted and bubbly and the sauce is hot and slightly thickened.

Notes

  • For added freshness, top the enchiladas with sour cream and chopped green onions just before serving.
  • You can substitute corn tortillas for a gluten-free option, but flour tortillas provide the best texture for rolling.
  • To spice things up, add diced jalapeños or hot sauce to the beef mixture.
  • Leftover enchiladas store well in the refrigerator for up to 3 days and reheat nicely in the oven or microwave.
