Ingredients
- 12 oz cheese tortellini (fresh or frozen)
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup gorgonzola cheese, crumbled
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tablespoon chopped fresh parsley (for garnish)
- 1 tablespoon olive oil (optional, for extra richness)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside, reserving a small cup of pasta water.
- In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes, until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in gorgonzola cheese and Parmesan cheese. Let the sauce cook for about 3–5 minutes, stirring frequently, until the cheeses are melted and the sauce thickens.
- Add the cooked tortellini to the skillet and toss to coat in the creamy sauce. If the sauce is too thick, add a little pasta water to loosen it.
- Season with salt and pepper to taste. For extra richness, stir in a tablespoon of olive oil.
- Serve the tortellini hot, garnished with fresh parsley.
