Description

Ingredients

  • 12 oz cheese tortellini (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup gorgonzola cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tablespoon chopped fresh parsley (for garnish)
  • 1 tablespoon olive oil (optional, for extra richness)

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside, reserving a small cup of pasta water.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes, until fragrant.
  3. Pour in the heavy cream and bring to a simmer. Stir in gorgonzola cheese and Parmesan cheese. Let the sauce cook for about 3–5 minutes, stirring frequently, until the cheeses are melted and the sauce thickens.
  4. Add the cooked tortellini to the skillet and toss to coat in the creamy sauce. If the sauce is too thick, add a little pasta water to loosen it.
  5. Season with salt and pepper to taste. For extra richness, stir in a tablespoon of olive oil.
  6. Serve the tortellini hot, garnished with fresh parsley.
