Instructions

  1. Slice the beef (such as sirloin or filet) into thin strips; season with salt, pepper, and smoked paprika.
  2. Heat olive oil over high heat, sear the beef quickly (1–2 minutes per side), then remove from the pan.
  3. In the same pan, melt butter and sauté finely chopped onion until soft (about 2 minutes).
  4. Add minced garlic and sliced mushrooms, cooking until mushrooms turn golden and their juices evaporate (about 5 minutes).
  5. Stir in Worcestershire sauce and Dijon mustard to deglaze the pan and capture browned bits.
  6. Pour in beef stock, simmer for about 5 minutes until reduced slightly.
  7. Lower the heat and stir in sour cream (and a splash of lemon juice if desired), mixing until creamy.
  8. Return the seared beef to the pan, coating it in the sauce; cook just until warmed through, about 2 minutes.
