Description

Glazed corned beef is a tender and flavorful dish, enhanced with a sweet and savory glaze that caramelizes in the oven. Perfect for holidays or family dinners.


Ingredients

  • 34 pounds of corned beef brisket
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 2 tbsp whole grain mustard
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Place the corned beef brisket in a roasting pan, fat side up. Cover the pan with aluminum foil and bake for 2 to 2.5 hours, or until the corned beef is tender.
  3. While the corned beef is cooking, prepare the glaze. In a small saucepan, combine the brown sugar, Dijon mustard, apple cider vinegar, whole grain mustard, ground cloves, ground cinnamon, black pepper, and salt. Stir over medium heat until the sugar has dissolved and the mixture thickens slightly.
  4. After 2 to 2.5 hours, remove the corned beef from the oven and discard the foil. Brush the glaze generously over the top and sides of the corned beef.
  5. Return the corned beef to the oven and bake, uncovered, for an additional 30-45 minutes, or until the glaze has caramelized and the corned beef is golden brown.
  6. Once done, remove the corned beef from the oven and let it rest for 10-15 minutes before slicing.

Notes

  • Use a meat thermometer to ensure the internal temperature reaches 195°F to 205°F for optimal tenderness.
  • The glaze can be made in advance and stored in the fridge for up to 3 days.
  • Letting the corned beef rest before slicing ensures juicier meat.
