Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet or oven-safe pan in the oven while it heats up, allowing the pan to get hot.

Make the Batter:

In a medium bowl, whisk together the eggs, flour, milk, salt, and vanilla extract until smooth. The batter will be thin—this is normal.

Prepare the Pan:

Carefully remove the hot skillet from the oven (use oven mitts). Add the butter to the pan and let it melt, swirling the pan to coat the bottom and sides with butter.

Cook the Pancake:

Pour the prepared batter into the hot, buttered skillet. Immediately return the skillet to the oven. Bake for 20-25 minutes, or until the pancake has puffed up and the edges are golden brown and crispy.

- Remove the pancake from the oven and let it cool for a minute. It will deflate slightly as it cools, which is perfectly normal. Dust with powdered sugar and top with your favorite toppings, such as fresh berries, maple syrup, or a squeeze of lemon juice.
