Ingredients

3–4 lb beef roast (top round, ribeye, or sirloin)

3 tbsp olive oil

5 garlic cloves, minced

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme, chopped

1 tbsp fresh parsley, chopped

2 tsp salt
-
1 tsp black pepper
- 1 tsp onion powder
Instructions

Preheat oven to 450°F (230°C).

In a small bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, pepper, and onion powder into a paste.

Pat roast dry and rub herb mixture evenly over the surface.

Place roast on a rack in a roasting pan.

Roast at 450°F for 15 minutes, then reduce temperature to 325°F (160°C).

Continue roasting 1 ½ – 2 hours, or until internal temperature reaches desired doneness (125°F for medium-rare, 135°F for medium).
- Remove roast, tent with foil, and let rest 15 minutes before slicing.
