Description

“Juicy and flavorful garlic herb roast beef rubbed with fresh herbs, garlic, and olive oil. Perfect holiday centerpiece or Sunday dinner.”


Ingredients

  • 3–4 lb beef roast (top round, ribeye, or sirloin)

  • 3 tbsp olive oil

  • 5 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 1 tbsp fresh parsley, chopped

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tsp onion powder

Instructions

  • Preheat oven to 450°F (230°C).

  • In a small bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, pepper, and onion powder into a paste.

  • Pat roast dry and rub herb mixture evenly over the surface.

  • Place roast on a rack in a roasting pan.

  • Roast at 450°F for 15 minutes, then reduce temperature to 325°F (160°C).

  • Continue roasting 1 ½ – 2 hours, or until internal temperature reaches desired doneness (125°F for medium-rare, 135°F for medium).

  • Remove roast, tent with foil, and let rest 15 minutes before slicing.

Notes

  • Use a meat thermometer for perfect doneness.

  • Leftovers make excellent roast beef sandwiches.
