Description
The Garlic Butter Mushroom Cauliflower Skillet is a savory, low-carb dish that combines earthy mushrooms with creamy cauliflower in a flavorful garlic butter sauce, making it a perfect side or light main course.
Ingredients
- 1 medium head of cauliflower, cut into florets
- 1 lb mushrooms, sliced (button or cremini)
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon fresh thyme or dried thyme
- 1/2 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cauliflower florets and season with salt and pepper. Cook for about 7-8 minutes, stirring occasionally, until the cauliflower is golden brown and slightly tender. Remove the cauliflower from the skillet and set it aside.
- In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for about 5-6 minutes, stirring occasionally, until they release their moisture and become golden brown.
- Add the minced garlic and thyme to the skillet with the mushrooms. Stir and cook for another 1-2 minutes, until the garlic becomes fragrant and the mushrooms are fully cooked.
- Return the cooked cauliflower to the skillet with the mushrooms. Toss everything together so that the cauliflower is coated with the garlic butter sauce. Season with additional salt and pepper to taste.
- If desired, sprinkle the grated Parmesan cheese over the dish and let it melt into the cauliflower and mushrooms. Garnish with fresh parsley before serving.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
- For a dairy-free version, use plant-based butter and skip the Parmesan cheese or use a dairy-free alternative.
- If using frozen cauliflower, thaw and drain it before cooking to avoid excess moisture.
- This recipe is perfect for keto and low-carb diets as it uses cauliflower instead of high-carb vegetables.
- If you prefer a spicier dish, add red pepper flakes or cayenne pepper to the garlic butter sauce.
