A fluffy, protein-packed egg bake loaded with cheese and vegetables, perfect for a nutritious breakfast meal prep or a cozy weekend brunch gathering.
Ingredients
Egg Mixture
- 8 large eggs
- ½ cup milk
- Salt & pepper, to taste
Add-ins
- 1 cup shredded cheddar cheese
- 1 cup diced vegetables (bell pepper, onion, spinach)
Instructions
- Preheat the oven: Set your oven to 375 °F (190 °C) to ensure it reaches the perfect temperature for baking the casserole evenly.
- Prepare egg mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until fully combined and slightly frothy to incorporate air for fluffiness.
- Add vegetables and cheese: Gently fold in the diced bell pepper, onion, spinach, and shredded cheddar cheese until everything is evenly distributed through the egg mixture.
- Pour and bake: Grease a baking dish to prevent sticking, then pour the egg mixture into it. Place the dish in the oven and bake for 25 to 30 minutes, or until the casserole is set in the middle and lightly golden on top.

- Add cooked sausage or bacon for a hearty, meatier version of the casserole.
- Use any combination of your favorite vegetables for variation.
