Ingredients

  • 1 tablespoon olive oil
  • 1 lb Italian sausage (bulk or casing removed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth (or vegetable broth for a lighter option)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 package (9 oz) refrigerated cheese tortellini (or frozen)
  • 2 cups fresh spinach, chopped
  • 1/2 cup heavy cream (or milk for a lighter version)
  • Salt and pepper to taste
  • Fresh parsley or Parmesan cheese (optional, for garnish)

Instructions

  • Sauté the vegetables: Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute until fragrant.
  • Add the broth and tomatoes: Pour in the chicken broth and diced tomatoes with juices. Stir and bring to a simmer, cooking for 5-7 minutes to meld flavors.
  • Cook the tortellini: Add the tortellini and cook according to package instructions, about 3-5 minutes, until tender and floating to the top.
  • Add the spinach and cream: Stir in the chopped spinach and heavy cream. Cook for another 2-3 minutes until the spinach wilts and soup is heated through. Season with salt and pepper to taste.
