Description

Easy Hobo Casserole is a hearty and comforting Tex-Mex-inspired casserole made with ground beef, vegetables, and a cheesy topping, all baked together on a bed of tender potatoes. Perfect for a simple, flavorful family meal.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, thinly sliced
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil or butter

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil or butter over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Add the diced onion and minced garlic to the skillet with the beef and cook for another 3-4 minutes until softened.
  4. In a medium bowl, combine cream of mushroom soup, milk, paprika, salt, and pepper. Stir to combine.
  5. Layer the bottom of the prepared baking dish with half of the sliced potatoes. Top with half of the beef mixture, followed by half of the mixed vegetables. Pour half of the soup mixture over the layers, then repeat the layers (potatoes, beef, vegetables, soup).
  6. Cover with aluminum foil and bake for 45-50 minutes, or until the potatoes are tender.
  7. Remove the foil and sprinkle shredded cheddar cheese over the top. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole cool for a few minutes before serving. Enjoy!

  • For extra flavor, add crispy beef bits on top before baking.
  • You can swap frozen mixed vegetables for fresh vegetables like bell peppers or zucchini.
  • If you’re a cheese lover, feel free to add more cheese halfway through baking.
