Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil (for topping)
  • 1/4 cup grated Parmesan cheese (optional)
  • Balsamic glaze (for drizzling, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and olive oil.
  2. Heat a skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes on each side until golden brown. Transfer the chicken to a baking dish.
  3. Bake the chicken for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  4. While the chicken is baking, prepare the bruschetta topping. In a bowl, combine diced tomatoes, chopped basil, balsamic vinegar, and 1 tablespoon olive oil. Stir to combine.
  5. Once the chicken is cooked through, remove it from the oven and top each breast with the tomato-basil mixture. If desired, sprinkle with grated Parmesan cheese.
  6. Return the chicken to the oven for another 2–3 minutes to melt the cheese, if using.
  7. Drizzle with balsamic glaze and serve warm with your choice of sides, like roasted vegetables or a simple salad.
