Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil (for topping)
- 1/4 cup grated Parmesan cheese (optional)
- Balsamic glaze (for drizzling, optional)
Instructions
- Preheat oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and olive oil.
- Heat a skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes on each side until golden brown. Transfer the chicken to a baking dish.
- Bake the chicken for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
- While the chicken is baking, prepare the bruschetta topping. In a bowl, combine diced tomatoes, chopped basil, balsamic vinegar, and 1 tablespoon olive oil. Stir to combine.
- Once the chicken is cooked through, remove it from the oven and top each breast with the tomato-basil mixture. If desired, sprinkle with grated Parmesan cheese.
- Return the chicken to the oven for another 2–3 minutes to melt the cheese, if using.
- Drizzle with balsamic glaze and serve warm with your choice of sides, like roasted vegetables or a simple salad.
