Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cups green cabbage, shredded
- 2 medium potatoes, peeled and diced
- 6 cups vegetable broth or water
- 1 teaspoon dried thyme
- 1 teaspoon paprika (optional)
- Salt and pepper, to taste
- Fresh parsley or dill, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté for 3–4 minutes until translucent.
- Add garlic, carrots, and celery. Cook for another 2–3 minutes until fragrant.
- Add shredded cabbage, diced potatoes, vegetable broth, thyme, paprika, salt, and pepper. Stir to combine.
- Bring the soup to a boil, then reduce heat and simmer for 20–25 minutes, or until vegetables are tender.
- Adjust seasoning as needed. Serve hot, garnished with fresh parsley or dill.
Notes
- For a smoother texture, partially blend the soup using an immersion blender.
- This soup is excellent for meal prep and can be stored in the fridge for up to 4 days.
