Ingredients
Vegetables and Aromatics
- 1 Tbsp olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 cups chopped cabbage
- 2 medium potatoes, diced
Liquids and Canned Goods
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
Spices and Seasonings
- 1 tsp turmeric
- ½ tsp paprika
- Salt & pepper, to taste
- Juice of ½ lemon
Instructions
- Sauté Vegetables: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sliced carrots, cooking for about 5 minutes until the onion becomes translucent and the carrots begin to soften.
- Add Main Ingredients: Stir in the chopped cabbage, diced potatoes, and the can of diced tomatoes. Pour in 4 cups of vegetable broth and mix in turmeric, paprika, salt, and pepper. Bring the mixture to a boil.
- Simmer Soup: Reduce heat to low and let the soup simmer gently for 25 to 30 minutes, or until all the vegetables are tender and the flavors meld together.
- Finish and Serve: Remove the pot from heat and stir in the juice of half a lemon to add a bright, fresh touch to the soup. Adjust seasoning with additional salt and pepper if needed, then serve warm.
