Ingredients

Vegetables and Aromatics

  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 cups chopped cabbage
  • 2 medium potatoes, diced

Liquids and Canned Goods

  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes

Spices and Seasonings

  • 1 tsp turmeric
  • ½ tsp paprika
  • Salt & pepper, to taste
  • Juice of ½ lemon


Instructions

  1. Sauté Vegetables: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sliced carrots, cooking for about 5 minutes until the onion becomes translucent and the carrots begin to soften.
  2. Add Main Ingredients: Stir in the chopped cabbage, diced potatoes, and the can of diced tomatoes. Pour in 4 cups of vegetable broth and mix in turmeric, paprika, salt, and pepper. Bring the mixture to a boil.
  3. Simmer Soup: Reduce heat to low and let the soup simmer gently for 25 to 30 minutes, or until all the vegetables are tender and the flavors meld together.
  4. Finish and Serve: Remove the pot from heat and stir in the juice of half a lemon to add a bright, fresh touch to the soup. Adjust seasoning with additional salt and pepper if needed, then serve warm.
