Description
Spinach Lasagna Roll-Ups are a fun and easy twist on traditional lasagna, featuring tender lasagna noodles rolled up with a creamy ricotta and spinach filling, then baked in marinara sauce and topped with melted cheese.
Ingredients
- 
Lasagna Roll-Ups:
 - 9 lasagna noodles
 - 1 tablespoon olive oil
 - 2 cloves garlic, minced
 - 5 oz fresh spinach (or 10 oz frozen, thawed and drained)
 - 1 1/2 cups ricotta cheese
 - 1/2 cup grated Parmesan cheese
 - 1 egg
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper

Assembly and Baking:
 - 2 cups marinara sauce
 - 1 cup shredded mozzarella cheese
 - Fresh basil or parsley, for garnish (optional)
 
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
 - Cook lasagna noodles according to package directions. Drain and lay flat on parchment or wax paper.
 - In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute, then add spinach and cook until wilted (if using fresh). Remove from heat and let cool slightly.
 - In a bowl, combine ricotta, Parmesan, egg, salt, pepper, and the cooked spinach mixture. Mix until well combined.
 - Spread a thin layer of marinara sauce on the bottom of the baking dish.
 - Spread 2–3 tablespoons of the ricotta-spinach filling onto each lasagna noodle. Roll up each noodle and place seam-side down in the dish.
 - Pour the remaining marinara sauce over the roll-ups and sprinkle with mozzarella cheese.
 - Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until cheese is melted and bubbly.
 - Garnish with fresh basil or parsley if desired, and serve warm.
 
Notes
- You can prep this dish ahead and refrigerate before baking.
 - Add sautéed mushrooms or cooked ground turkey for variation.
 - Frozen spinach should be thawed and squeezed dry before use.
 - Serve with garlic bread and a side salad for a complete meal.
