Description

Spinach Lasagna Roll-Ups are a fun and easy twist on traditional lasagna, featuring tender lasagna noodles rolled up with a creamy ricotta and spinach filling, then baked in marinara sauce and topped with melted cheese.


Ingredients

  • Lasagna Roll-Ups:

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 5 oz fresh spinach (or 10 oz frozen, thawed and drained)
  • 1 1/2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Assembly and Baking:

  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook lasagna noodles according to package directions. Drain and lay flat on parchment or wax paper.
  3. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute, then add spinach and cook until wilted (if using fresh). Remove from heat and let cool slightly.
  4. In a bowl, combine ricotta, Parmesan, egg, salt, pepper, and the cooked spinach mixture. Mix until well combined.
  5. Spread a thin layer of marinara sauce on the bottom of the baking dish.
  6. Spread 2–3 tablespoons of the ricotta-spinach filling onto each lasagna noodle. Roll up each noodle and place seam-side down in the dish.
  7. Pour the remaining marinara sauce over the roll-ups and sprinkle with mozzarella cheese.
  8. Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes until cheese is melted and bubbly.
  9. Garnish with fresh basil or parsley if desired, and serve warm.

Notes

  • You can prep this dish ahead and refrigerate before baking.
  • Add sautéed mushrooms or cooked ground turkey for variation.
  • Frozen spinach should be thawed and squeezed dry before use.
  • Serve with garlic bread and a side salad for a complete meal.
