Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 packet (1 oz) ranch dressing mix

  • 1 cup sun-dried tomatoes, chopped

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup heavy cream

  • 1/4 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • Salt and pepper to taste

  • Fresh basil or parsley (for garnish, optional)

  • Cooked rice, pasta, or vegetables (for serving)

Instructions

  • Prepare the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.

    • In a skillet, heat olive oil over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until lightly golden brown. (This step is optional but helps to lock in flavor and moisture.)

    • Transfer the seared chicken breasts to the crockpot.

  • Make the Creamy Sauce:

    • In a medium bowl, whisk together the ranch dressing mix, sun-dried tomatoes, cream of chicken soup, heavy cream, chicken broth, garlic, and Parmesan cheese until smooth and combined.

  • Slow Cook:

    • Pour the creamy sauce mixture over the chicken breasts in the crockpot, making sure the chicken is well-covered with sauce.

    • Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is fully cooked and tender (internal temperature should reach 165°F/74°C).

  • Serve:

    • Once the chicken is cooked, remove the chicken breasts from the crockpot and place them on a serving plate.

    • Stir the sauce in the crockpot, then pour the sauce over the chicken.

  • Garnish with fresh basil or parsley and serve over rice, pasta, or your favorite vegetables.

Notes

  • For added flavor, you can use chicken thighs instead of chicken breasts.

  • If you prefer a richer flavor, increase the Parmesan cheese  to the sauce.
