- 2 cups cooked shredded chicken
- 1 box stuffing mix (approx. 6 oz)
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- ¾ cup chicken broth
- 1 cup frozen peas or green beans
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare the sauce: In a mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, salt, and pepper. Stir until the mixture is smooth and well blended.
- Assemble in the crock pot: Place the shredded chicken and frozen vegetables evenly in the crock pot. Pour the prepared sauce mixture over the chicken and vegetables, making sure everything is covered.
- Add stuffing topping: Evenly sprinkle the stuffing mix across the top of the chicken and sauce layer in the crock pot. This will create a crispy and flavorful topping as it cooks.
- Slow cook the casserole: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours. The casserole is done when the chicken is heated thoroughly and the stuffing topping is cooked through.
- Finish and serve: Before serving, fluff the stuffing topping gently to separate and lighten it. Optionally, add shredded cheese during the last 30 minutes to melt over the top.
