  • 2 cups cooked shredded chicken
  • 1 box stuffing mix (approx. 6 oz)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ¾ cup chicken broth
  • 1 cup frozen peas or green beans
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Prepare the sauce: In a mixing bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, salt, and pepper. Stir until the mixture is smooth and well blended.
  2. Assemble in the crock pot: Place the shredded chicken and frozen vegetables evenly in the crock pot. Pour the prepared sauce mixture over the chicken and vegetables, making sure everything is covered.
  3. Add stuffing topping: Evenly sprinkle the stuffing mix across the top of the chicken and sauce layer in the crock pot. This will create a crispy and flavorful topping as it cooks.
  4. Slow cook the casserole: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours. The casserole is done when the chicken is heated thoroughly and the stuffing topping is cooked through.
  5. Finish and serve: Before serving, fluff the stuffing topping gently to separate and lighten it. Optionally, add shredded cheese during the last 30 minutes to melt over the top.
