Ingredients

  • Salt and pepper to taste

Sauce

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary


Instructions

  1. Season the ribs: Generously season the beef short ribs with salt and pepper on all sides to enhance their natural flavor.
  2. Brown the ribs (optional): Heat olive oil in a skillet over medium-high heat and brown the ribs for 2–3 minutes per side to develop deeper flavor and color.
  3. Prepare the crock pot: Place the seasoned or browned ribs into the crock pot in a single layer to ensure even cooking.
  4. Mix the sauce: In a bowl, combine chopped onion, minced garlic, red wine, beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Stir until well incorporated.
  5. Pour the sauce: Pour the mixture evenly over the ribs in the crock pot, making sure the ribs are mostly covered by the liquid for optimal braising.
  6. Cook the ribs: Set the crock pot to low and cook for 8–9 hours, or alternatively, cook on high for 4–5 hours until the ribs are fall-off-the-bone tender.
