Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Chickpeas: Pat the chickpeas very dry using a clean towel; removing as much moisture as possible is key to achieving maximum crispiness. Optionally, remove any loose skins for an even crunchier texture.
  3. Initial Baking: Spread the dried chickpeas evenly on the baking sheet and bake them plain for 10 minutes. This step helps to dry the chickpeas further which is essential for crispiness.
  4. Season Chickpeas: Remove the baking sheet from the oven and toss the chickpeas with olive oil, garlic powder, paprika, salt, and black pepper. You can also mix in any optional seasonings like smoked paprika, cayenne, or dried herbs at this stage.
  5. Final Bake: Return the chickpeas to the oven and bake for an additional 20 to 25 minutes. Shake or stir the pan halfway through baking to promote even cooking and browning. Bake until the chickpeas are golden and crispy.
  6. Cool and Serve: Let the chickpeas cool on the baking tray; they will continue to crisp up as they cool. Once cooled, enjoy as a snack or use as a crunchy topping.

  • For maximum crunch, store chickpeas at room temperature uncovered or loosely covered for up to 2 days.
