Instructions

In a large pot, heat olive oil (or butter) over medium heat.

Add the sausage and cook, breaking it apart with a spoon, until browned and fully cooked. Remove from the pot and set aside.

In the same pot, add the diced onion and garlic. Cook for 2-3 minutes, or until softened and fragrant.

Add the diced potatoes, chicken broth, dried thyme, and paprika. Bring to a boil, then reduce the heat to a simmer.

Cover and simmer for 15-20 minutes, or until the potatoes are tender.

Add the cooked sausage back into the pot, along with the heavy cream and milk. Stir to combine.

Simmer for an additional 5-10 minutes, until the soup is heated through and slightly thickened.
