Description

Ingredients

  • 1 lb Italian sausage (or sausage of your choice)

  • 4 large potatoes, peeled and diced

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 1/2 cups heavy cream

  • 1/2 cup milk

  • 1 tsp dried thyme

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • 2 tbsp olive oil (or butter)

  • 1/2 cup shredded cheddar cheese (optional for topping)

  • Fresh parsley (for garnish, optional)

Instructions

  • In a large pot, heat olive oil (or butter) over medium heat.

  • Add the sausage and cook, breaking it apart with a spoon, until browned and fully cooked. Remove from the pot and set aside.

  • In the same pot, add the diced onion and garlic. Cook for 2-3 minutes, or until softened and fragrant.

  • Add the diced potatoes, chicken broth, dried thyme, and paprika. Bring to a boil, then reduce the heat to a simmer.

  • Cover and simmer for 15-20 minutes, or until the potatoes are tender.

  • Add the cooked sausage back into the pot, along with the heavy cream and milk. Stir to combine.

  • Simmer for an additional 5-10 minutes, until the soup is heated through and slightly thickened.

  • Season with salt and pepper to taste.

  • Optional: Garnish with shredded cheddar cheese and fresh parsley before serving.

Notes

  • For a lighter version, you can substitute the heavy cream with half-and-half or use reduced-fat milk.

  • If you prefer a thicker soup, you can mash some of the potatoes in the pot before adding the cream.

  • Add some greens like spinach or kale for extra flavor and nutrients.

  • You can make this soup ahead of time! Just store it in an airtight container in the fridge for up to 3 days.
