Ingredients
- 4 medium-sized potatoes, peeled and diced
- 3 large carrots, peeled and chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream (or coconut milk for a dairy-free version)
- 2 tablespoons unsalted butter or olive oil
- Salt and pepper to taste
- 1/2 teaspoon dried thyme or fresh thyme (optional)
- 1 bay leaf (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté the Vegetables: In a large pot, heat the butter (or olive oil) over medium heat. Add the diced onion and garlic, sautéing for 3–4 minutes, until softened and fragrant.
- Cook the Potatoes and Carrots: Add the diced potatoes and chopped carrots to the pot, and stir to combine with the onion and garlic.
- Add the Broth and Seasonings: Pour in the broth, add the thyme and bay leaf (if using), and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the potatoes and carrots are tender.
- Blend the Soup: Remove the bay leaf, if used. Using an immersion blender, blend the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
- Add Cream and Adjust Seasonings: Once the soup is smooth, stir in the heavy cream (or coconut milk) and adjust the seasoning with more salt and pepper, if needed. Heat the soup for an additional 5 minutes.
- Serve: Ladle the soup into bowls and garnish with chopped parsley. Serve warm.

- This soup can be made vegan by using coconut milk and olive oil instead of butter.
