Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil

  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed or dry)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh basil or parsley, chopped (optional, for garnish)
  • 1 tablespoon fresh lemon juice (optional, for a tangy kick)

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the chopped sun-dried tomatoes, chicken broth, and heavy cream. Bring the mixture to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
  5. Stir in the Parmesan cheese and cook for an additional 2-3 minutes until the sauce becomes smooth and creamy.
  6. Return the chicken breasts to the skillet, spooning some of the sauce over the top. Simmer for another 5 minutes to heat the chicken through and allow the flavors to combine.
  7. If desired, add lemon juice for a burst of tanginess and stir to combine.
  8. Garnish with fresh basil or parsley before serving. Serve with your favorite side dish such as rice, pasta, or steamed vegetables.

Notes

  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or use a lighter cream option.
  • Add a pinch of red pepper flakes to the sauce for a little heat.
