Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 cup fresh or frozen cranberries
- 1/2 cup orange juice (fresh-squeezed preferred)
- 1 tbsp orange zest
- 3 tbsp honey or maple syrup
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tbsp fresh rosemary or thyme, chopped
- Salt and pepper, to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté garlic for 1 minute until fragrant.
- Add cranberries, orange juice, orange zest, honey, chicken broth, and herbs. Bring to a simmer.
- Return chicken to skillet, spooning sauce over the top.
- Reduce heat, cover, and cook for 10–15 minutes, until chicken is cooked through and sauce thickens.
- Adjust seasoning as needed and serve hot, garnished with extra orange zest or herbs.
