Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice (fresh-squeezed preferred)
  • 1 tbsp orange zest
  • 3 tbsp honey or maple syrup
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp fresh rosemary or thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute until fragrant.
  4. Add cranberries, orange juice, orange zest, honey, chicken broth, and herbs. Bring to a simmer.
  5. Return chicken to skillet, spooning sauce over the top.
  6. Reduce heat, cover, and cook for 10–15 minutes, until chicken is cooked through and sauce thickens.
  7. Adjust seasoning as needed and serve hot, garnished with extra orange zest or herbs.
