Description

Juicy roasted chicken glazed with a sweet and tangy cranberry balsamic sauce, this recipe is festive, flavorful, and perfect for holiday dinners. The combination of cranberry sauce, balsamic vinegar, honey, and fresh herbs creates a delicious, aromatic glaze that keeps the chicken moist and tender.

Ingredients

Chicken

  • 4 chicken breasts or thighs

Sauce

  • ½ cup cranberry sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt & pepper, to taste

Garnish

  • Fresh rosemary or thyme, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the proper temperature for roasting the chicken.
  2. Prepare the Sauce: In a bowl, whisk together the cranberry sauce, balsamic vinegar, honey, minced garlic, salt, and pepper until well combined, forming a smooth glaze.
  3. Coat the Chicken: Place the chicken breasts or thighs in a baking dish and evenly coat them with the cranberry balsamic mixture, making sure each piece is well covered.
  4. Roast the Chicken: Place the baking dish in the preheated oven and bake for 25 to 30 minutes. Halfway through cooking, baste the chicken with the sauce from the pan to enhance flavor and moisture.
  5. Garnish and Serve: Once cooked through and beautifully glazed, remove the chicken from the oven and garnish with fresh rosemary or thyme before serving.

Notes

  • Add Brussels sprouts or sweet potatoes to the pan during baking for a complete one-pan meal.
  • Using chicken thighs instead of breasts yields a juicier and more flavorful result.
