Description

Apple, Carrot, and Pumpkin Soup is a smooth and slightly sweet soup that blends autumn vegetables and fruits into a comforting and nourishing meal. It’s full of warm spices and perfect for fall or winter days.


Ingredients

    Vegetables and Fruits:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 apples, peeled, cored, and chopped
  • 2 cups pumpkin puree (or roasted pumpkin)
  • Spices and Seasonings:

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves (optional)
  • Liquids and Garnish:

  • 4 cups vegetable broth
  • 1/2 cup coconut milk or heavy cream
  • Salt and black pepper to taste
  • Fresh thyme or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add garlic, carrots, and apples. Cook for another 5–7 minutes, stirring occasionally.
  3. Stir in pumpkin puree, cinnamon, nutmeg, ginger, and cloves. Cook for 2 minutes to release the flavors.
  4. Pour in vegetable broth and bring the mixture to a boil.
  5. Reduce heat and simmer for 20–25 minutes, until carrots and apples are tender.
  6. Remove from heat and use an immersion blender to blend the soup until smooth. Alternatively, blend in batches using a countertop blender.
  7. Stir in coconut milk or cream, then season with salt and pepper to taste. Heat gently for 5 more minutes.
  8. Serve hot, garnished with fresh thyme or parsley if desired.

  • Use tart apples like Granny Smith for a subtle tangy flavor.
  • You can substitute pumpkin puree with butternut squash or sweet potato puree.
