Description
This copycat Panera Broccoli Cheddar Soup recipe perfectly replicates the creamy, cheesy, and comforting soup from Panera Bread. It features tender broccoli florets and shredded carrots in a rich cheddar cheese base, making it a hearty and flavorful meal ideal for cozy dinners.
Ingredients
Sauté Base
- 4 tbsp butter
- 1 small onion, diced
Soup Base
- ¼ cup flour
- 2 cups half-and-half
- 2 cups low-sodium chicken broth
Vegetables
- 3 cups chopped broccoli
- 1 cup shredded carrots
Cheese & Seasonings
- 2 cups sharp cheddar cheese, shredded
- ½ tsp paprika
- Salt & pepper to taste
Instructions
- Sauté Onion: Melt the butter in a large pot over medium heat. Add the diced onion and cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes.
- Make Roux: Sprinkle the flour over the cooked onions and stir constantly for 1 minute to form a roux, which will help thicken the soup.
- Add Liquids: Slowly whisk in the half-and-half and chicken broth, making sure to incorporate the roux evenly. Bring the mixture to a simmer and cook until it thickens slightly, about 5-7 minutes.
- Cook Vegetables: Add the chopped broccoli and shredded carrots to the pot. Continue simmering the soup for 15 minutes or until the vegetables are tender.
- Add Cheese & Seasonings: Lower the heat and stir in the shredded cheddar cheese, paprika, salt, and pepper. Stir until the cheese is fully melted and the soup is smooth.
- Optional Blending: For a creamier, smoother texture, use an immersion blender to partially blend the soup, leaving some vegetables chunky if preferred.
Notes
- For extra depth of flavor, add a splash of Worcestershire sauce while simmering.
- Serve the soup in a bread bowl to recreate the authentic Panera experience.
- If you prefer a vegetarian option, substitute chicken broth with vegetable broth.
