Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced

- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional, for heat)

- 8 oz uncooked lasagna noodles, broken into pieces
- 2 cups fresh spinach
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (plus extra for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant.
- Add chopped carrot, zucchini, and bell pepper to the pot. Cook for 5-7 minutes until vegetables soften.
- Stir in diced tomatoes, tomato sauce, vegetable broth, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Bring the soup to a simmer and cook for 10-15 minutes.
- Add broken lasagna noodles and cook according to package instructions (about 10 minutes) until tender, stirring occasionally.
- Stir in fresh spinach and cook for an additional 2-3 minutes until wilted.
- In a small bowl, combine ricotta, shredded mozzarella, and grated Parmesan cheese. Stir until well combined.
- Ladle the soup into bowls and top with a dollop of the cheese mixture. Stir to combine before serving. Optionally, garnish with extra Parmesan and fresh herbs like basil or parsley.
