Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp granulated sugar
- 1 tbsp instant coffee or espresso powder
- 1 1/4 cups milk (dairy or non-dairy)
- 2 large eggs
- 3 tbsp butter, melted (plus more for greasing the pan)
- 1 tsp vanilla extract
Instructions
- In a mixing bowl, whisk together flour, baking powder, salt, sugar, and instant coffee until well combined.
- In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter per pancake onto the hot surface. Cook for 2–3 minutes, until bubbles form on the surface.
- Flip and cook for another 1–2 minutes, until golden brown and cooked through.
- Serve warm with your favorite toppings.
Notes
- Use decaf coffee if you’re sensitive to caffeine or serving kids.
- Don’t overmix the batter—lumpy batter makes fluffier pancakes.
- For stronger flavor, increase the amount of coffee or use espresso powder.
- To make it vegan, substitute eggs with flax eggs and use plant-based milk and butter.
