Instructions
- Combine Ingredients: In a mixing bowl, thoroughly combine the shredded coconut, melted coconut oil, maple syrup, and vanilla extract until the mixture is well blended and sticky enough to form shapes.
 - Shape the Bites: Using your hands or a small cookie scoop, press the coconut mixture into small balls or flat disks. Place them on a lined tray or plate.
 - Chill the Bites: Refrigerate the formed bites for 20 minutes to firm them up and help them hold their shape.
 - Dip in Chocolate: Once chilled, dip the bottoms of each coconut bite into the melted dark chocolate, letting any excess drip off. Quickly sprinkle chopped pistachios over the chocolate-coated side to add texture and flavor.
