Description

Classic Chicken Salad is a fresh, creamy dish made with tender shredded chicken, crisp vegetables, and a mayonnaise-based dressing. It’s a versatile dish that can be served on a bed of greens, in a sandwich, or wrapped in a tortilla.


Ingredients

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh parsley (optional)
  • 1/4 cup sliced almonds or walnuts (optional)

Instructions

  1. In a large bowl, combine shredded chicken, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well until everything is coated.
  2. Stir in chopped celery, red onion, and parsley (if using). Taste and adjust seasoning as needed.
  3. If desired, fold in sliced almonds or walnuts for added crunch.
  4. Refrigerate the chicken salad for at least 30 minutes to allow flavors to meld. Serve chilled on a bed of greens, in a sandwich, or in a wrap.

Notes

  • For a lighter version, substitute Greek yogurt or sour cream for some or all of the mayonnaise.
  • Feel free to add grapes, apples, or dried cranberries for a touch of sweetness.
  • This chicken salad can be made ahead and stored in the refrigerator for 2–3 days.
