Ingredients
Salad:
- 1 cup uncooked farro (or 2 ½ cups cooked)
- 3 cups arugula or mixed greens
- 2 oranges, segmented or sliced (blood oranges if available)
- 1 grapefruit, segmented (optional)
- ¼ small red onion, thinly sliced
- ¼ cup pistachios or almonds, toasted
- ¼ cup crumbled feta or goat cheese (optional)
Citrus Vinaigrette:
- 2 tbsp olive oil
- 2 tbsp fresh orange juice
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup
- Salt & pepper to taste
Instructions
- Cook Farro: Cook the farro according to package directions, typically simmering it on the stovetop for about 20 minutes until tender. Drain any excess water and allow the farro to cool slightly.
- Combine Salad Ingredients: In a large bowl, mix together the cooked farro, arugula or mixed greens, orange segments, grapefruit segments if using, and thinly sliced red onion to create the base of the salad.
