Ingredients

Salad:

  • 1 cup uncooked farro (or 2 ½ cups cooked)
  • 3 cups arugula or mixed greens
  • 2 oranges, segmented or sliced (blood oranges if available)
  • 1 grapefruit, segmented (optional)
  • ¼ small red onion, thinly sliced
  • ¼ cup pistachios or almonds, toasted
  • ¼ cup crumbled feta or goat cheese (optional)

Citrus Vinaigrette:

  • 2 tbsp olive oil
  • 2 tbsp fresh orange juice
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste


Instructions

  1. Cook Farro: Cook the farro according to package directions, typically simmering it on the stovetop for about 20 minutes until tender. Drain any excess water and allow the farro to cool slightly.
  2. Combine Salad Ingredients: In a large bowl, mix together the cooked farro, arugula or mixed greens, orange segments, grapefruit segments if using, and thinly sliced red onion to create the base of the salad.
  3. Make Vinaigrette: In a small bowl, whisk together olive oil, fresh orange juice, lemon juice, honey or maple syrup, and salt and pepper until the dressing is smooth and emulsified.
  4. Toss Salad: Drizzle the citrus vinaigrette over the salad ingredients and toss gently to ensure everything is evenly coated.
  5. Add Toppings and Serve: Sprinkle toasted pistachios or almonds and crumbled feta or goat cheese over the top. Serve the salad immediately or allow it to chill slightly before serving for a refreshing flavor.
