Description
A classic Chinese comfort dish featuring fluffy scrambled eggs and sweet-tangy tomatoes, cooked quickly in a stir fry style. This Tomato Egg Stir Fry is budget-friendly, full of savory umami flavor, and perfect served over warm steamed rice for a satisfying meal.
Ingredients
Egg Mixture
- 4 large eggs
- ½ tsp salt, divided (¼ tsp for eggs, ¼ tsp for tomatoes)
Tomato Stir Fry
- 2–3 medium tomatoes, cut into wedges
- 2 tbsp oil (neutral, such as canola)
- 1 tbsp sugar (adjust to taste)
- 1 tbsp soy sauce
- 1 green onion, chopped (optional)
Instructions
- Prepare Eggs: In a bowl, whisk the 4 large eggs with ¼ tsp salt until the mixture is fully blended and smooth to ensure fluffy scrambled eggs.
- Cook Eggs: Heat 1 tablespoon of oil in a pan over medium-high heat. Pour in the egg mixture and scramble gently until just set but still soft and tender. Remove eggs from the pan and set aside to prevent overcooking.
- Cook Tomatoes: In the same pan, add the remaining 1 tablespoon of oil and the tomato wedges. Cook for 2 to 3 minutes until the tomatoes soften and begin releasing their juices, forming a natural sauce base.
- Create Sauce: Stir in the sugar and soy sauce with the tomatoes, and simmer briefly to blend the flavors and create a light, sweet-tangy sauce.
- Combine and Finish: Return the scrambled eggs to the pan, tossing gently with the tomatoes and sauce to combine everything evenly. Add the chopped green onion if using, and adjust seasoning as desired to balance flavors.
- Serve: Serve the Tomato Egg Stir Fry hot, ideally over a bed of steamed rice for a comforting and filling meal.
Notes
- To balance the tartness of the tomatoes, add an extra pinch of sugar as needed.
- For additional aromatic flavor, add minced ginger or garlic when cooking the tomatoes, though this is not traditional.
- For a saucier dish, add a splash of water or chicken broth while simmering the tomatoes.
- Make it a complete meal by serving with steamed rice and a side of bok choy or cucumber salad.
