Ingredients

Protein and Vegetables

  • 1 lb ground beef or ground turkey
  • 1 medium onion, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes

Pasta and Dairy

  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste


Instructions

  1. Brown the Meat and Onion: Heat a large skillet or pot over medium heat. Add the ground beef or turkey along with the diced onion. Cook until the meat is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  2. Add Beans, Tomatoes, and Spices: Stir in the drained kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer and let it cook for about 5 minutes to allow the flavors to meld.
  3. Cook Pasta and Stir in Cheese: Add the elbow macaroni to the skillet with enough water or broth to just cover the pasta. Cook, stirring occasionally, until the macaroni is tender, about 8-10 minutes. Reduce heat to low and stir in the shredded cheddar cheese until melted and creamy.
  4. Serve: Once the cheese is fully incorporated and the dish is heated through, remove from heat and serve warm. Optionally, top with jalapeños or sour cream for added flavor.
