Description
Two classic comfort foods in one — rich, cheesy mac and cheese meets hearty chili for the ultimate cozy dinner that’s perfect for a family-friendly weeknight meal.
Ingredients
Protein and Vegetables
- 1 lb ground beef or ground turkey
- 1 medium onion, diced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
Pasta and Dairy
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
Spices
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Brown the Meat and Onion: Heat a large skillet or pot over medium heat. Add the ground beef or turkey along with the diced onion. Cook until the meat is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
- Add Beans, Tomatoes, and Spices: Stir in the drained kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer and let it cook for about 5 minutes to allow the flavors to meld.
- Cook Pasta and Stir in Cheese: Add the elbow macaroni to the skillet with enough water or broth to just cover the pasta. Cook, stirring occasionally, until the macaroni is tender, about 8-10 minutes. Reduce heat to low and stir in the shredded cheddar cheese until melted and creamy.
- Serve: Once the cheese is fully incorporated and the dish is heated through, remove from heat and serve warm. Optionally, top with jalapeños or sour cream for added flavor.
Notes
- Make vegetarian by omitting the meat and using additional beans or plant-based protein.
- Top with sliced jalapeños or a dollop of sour cream for extra spice and creaminess.
- Use ground turkey for a leaner version.
- For a gluten-free option, substitute elbow macaroni with gluten-free pasta.
