Description

Chicken Piccata is a classic Italian-American dish featuring tender chicken breasts sautéed and served in a lemony caper sauce. It’s light, zesty, and perfect for a quick yet elegant dinner.

Ingredients

  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1/2 cup all-purpose flour (for dredging)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup brined capers, rinsed
  • 2 tablespoons chopped fresh parsley
  • Lemon slices, for garnish (optional)

Instructions

  1. Place chicken cutlets between plastic wrap and pound to even 1/4-inch thickness if needed.
  2. In a shallow dish, mix flour with salt and pepper. Dredge each piece of chicken in the flour mixture, shaking off excess.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  4. Reduce heat to medium. Add butter, chicken broth, lemon juice, and capers to the skillet. Stir and simmer for 3–4 minutes until slightly reduced.
  5. Return chicken to the pan and spoon sauce over it. Cook for another 2 minutes until heated through.
  6. Garnish with parsley and lemon slices. Serve immediately.

Notes

  • Serve with pasta, mashed potatoes, or steamed vegetables.
  • You can substitute white wine for chicken broth for added depth of flavor.
  • Be careful not to overcook the chicken to keep it juicy and tender.
