Description
Chicken Piccata is a classic Italian-American dish featuring tender chicken breasts sautéed and served in a lemony caper sauce. It’s light, zesty, and perfect for a quick yet elegant dinner.
Ingredients
- 2 boneless, skinless chicken breasts, halved horizontally
- 1/2 cup all-purpose flour (for dredging)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup brined capers, rinsed
- 2 tablespoons chopped fresh parsley
- Lemon slices, for garnish (optional)
Instructions
- Place chicken cutlets between plastic wrap and pound to even 1/4-inch thickness if needed.
- In a shallow dish, mix flour with salt and pepper. Dredge each piece of chicken in the flour mixture, shaking off excess.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add butter, chicken broth, lemon juice, and capers to the skillet. Stir and simmer for 3–4 minutes until slightly reduced.
- Return chicken to the pan and spoon sauce over it. Cook for another 2 minutes until heated through.
- Garnish with parsley and lemon slices. Serve immediately.
Notes
- Serve with pasta, mashed potatoes, or steamed vegetables.
- You can substitute white wine for chicken broth for added depth of flavor.
- Be careful not to overcook the chicken to keep it juicy and tender.
