Description

Cheesy Taco Biscuit Bake combines seasoned ground beef, bell peppers, onions, and a creamy sauce, topped with biscuit dough and melted cheddar cheese for a hearty, comforting dish.

Ingredients

Ground Beef Mixture:

  • 1.5 pounds lean ground beef
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, chopped
  • 1 ounce taco seasoning mix

Biscuit Dough:

  • 2 ½ cups biscuit mix (like Bisquick)
  • 1 cup water
  • Cooking spray (like Pam)

Creamy Sauce:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1 1/2 cups cheddar cheese, fiesta blend, shredded (divided)
  • 1 teaspoon garlic powder
  • 1/2 cup salsa (mild)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F. Spray a 9×13-inch baking dish with cooking spray.
  2. Cook Ground Beef: In a skillet, cook the ground beef until browned. Add bell pepper, onion, and taco seasoning. Cook until vegetables are tender.
  3. Prepare Biscuit Dough: In a bowl, mix biscuit mix, water, and garlic powder.
  4. Assemble: Spread beef mixture in the baking dish. Mix sour cream, mayonnaise, and green chiles. Spread over beef. Drop spoonfuls of biscuit dough on top. Sprinkle with cheese.
  5. Bake: Bake for 25-30 minutes until golden brown and bubbly.
  6. Serve: Let cool slightly and serve with salsa.

Notes

  • For a spicier version, add jalapeños or diced tomatoes with green chilies.
  • For a vegetarian option, use plant-based protein.
  • Garnish with cilantro, green onions, or low-fat sour cream.
  • Low-fat sour cream or mayonnaise can be used for a lighter dish.
