Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 medium head of cabbage, chopped
- 1 cup cooked rice (white or brown)
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 4 cups beef broth
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Add chopped onion and garlic to the pot and sauté for about 5 minutes, or until softened.
- Stir in chopped cabbage and cook for 5-7 minutes until it begins to soften.
- Pour in diced tomatoes, tomato paste, and beef broth. Add basil, thyme, paprika, salt, and pepper. Bring to a simmer.
- Reduce heat to low and let the soup simmer for 30-40 minutes, until the cabbage is tender and flavors meld together.
- Stir in the cooked rice and simmer for an additional 5 minutes to heat through.
- Serve hot, garnished with fresh herbs or a dollop of sour cream, if desired.
Notes
- For a leaner version, swap ground beef for ground turkey.
- Add more vegetables like carrots, bell peppers, or zucchini for extra flavor and nutrition.
- If you prefer a vegetarian version, use lentils or beans instead of meat and vegetable broth.
- Freeze leftovers for up to 3 months. Let it cool completely before transferring to a freezer-safe container.
