Instructions

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.

Preheat a griddle or non-stick pan over medium heat and lightly grease with butter or cooking spray.

Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.
