Ingredients

  • 1 1/2 cups all-purpose flour

  • 3 1/2 tsp baking powder

  • 1 tsp sugar

  • 1/2 tsp salt

  • 1 1/4 cups buttermilk

  • 1 large egg

  • 2 tbsp unsalted butter, melted

  • 1 tsp vanilla extract

  • Optional: 1/4 cup chocolate chips or berries (for extra flavor)


Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

  • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until well combined.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy; do not overmix.

  • Preheat a griddle or non-stick pan over medium heat and lightly grease with butter or cooking spray.

  • Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.

  • Flip the pancake and cook for another 1-2 minutes until golden brown.

  • Remove from the griddle and keep warm while you cook the remaining pancakes.

  • Serve with maple syrup, fresh berries, or your favorite toppings.

Notes

  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.

  • If you don’t have buttermilk, you can make a substitute by adding 1 tbsp lemon juice or vinegar to 1 1/4 cups milk. Let it sit for 5 minutes before using.
