Instructions

  1. Mix the filling: In a medium bowl, combine the cooked shredded chicken, buffalo sauce, cream cheese (or ranch dressing if preferred), and shredded cheddar or mozzarella cheese. Mix thoroughly until all ingredients are evenly incorporated.
  2. Prepare the wrappers: Place an egg roll wrapper on a clean flat surface. Spoon a generous amount of the buffalo chicken mixture onto the center of the wrapper, near one corner.
  3. Roll the egg rolls: Fold the corner of the wrapper over the filling, then fold in the sides tightly. Roll the wrapper tightly toward the opposite corner and seal the edges using a little water to help it stick securely.
  4. Heat the oil: In a deep skillet or frying pan, heat oil to 350°F (175°C). Use a thermometer to maintain the temperature for best results.
