Description

This Broccoli Mac and Cheese is a creamy, cheesy, and comforting dish featuring tender macaroni pasta and fresh broccoli florets. Perfect for a quick weeknight dinner, it’s kid-friendly and customizable with variations like adding chicken or baking with a crunchy breadcrumb topping.

Ingredients

Pasta and Vegetables

  • 8 oz macaroni pasta
  • 2 cups broccoli florets

Sauce

  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp flour
  • ½ tsp garlic powder
  • Salt & pepper, to taste

Instructions

  1. Cook Pasta and Broccoli: In a large pot, boil water and cook the macaroni pasta along with the broccoli florets until pasta is tender and broccoli is slightly softened, approximately 8-10 minutes. Drain and set aside.
  2. Make the Roux: In the same pot, melt the butter over medium heat. Once melted, stir in the flour to form a smooth paste (roux). Cook for about 1-2 minutes, stirring constantly to avoid browning.
  3. Add Milk and Thicken: Gradually whisk in the milk, continuing to stir until the mixture thickens into a creamy sauce, approximately 3-5 minutes.
  4. Incorporate Cheese and Seasonings: Stir in the shredded cheddar cheese, garlic powder, salt, and pepper until the cheese is fully melted and the sauce is smooth.
  5. Combine and Serve: Toss the cooked macaroni and broccoli with the cheese sauce until evenly coated. Serve immediately for a warm, comforting meal.

Notes

  • For a crunchy topping, bake the mac and cheese with breadcrumbs on top at 350°F for 15 minutes.
  • Try substituting broccoli with cauliflower or peas for a different vegetable twist.
  • Add cooked chicken or crispy bacon to increase protein content and make it more filling.
