Description

Ingredients

  • 4 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 cups half-and-half (or whole milk)
  • 4 cups broccoli florets, chopped small
  • 2 medium carrots, shredded
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper, to taste


Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic; sauté until softened.
  2. Stir in flour and cook for 1–2 minutes to form a roux.
  3. Slowly whisk in broth, then add half-and-half. Stir until smooth.
  4. Add broccoli and carrots. Simmer 15–20 minutes, until vegetables are tender.
  5. Reduce heat to low. Stir in shredded cheddar until melted and creamy.
  6. Season with salt and pepper. Serve hot with crusty bread.

  • For extra creaminess, purée half the soup with an immersion blender before adding cheese.
