Instructions

  1. Prepare the eggs: In a bowl, crack the eggs and season with salt and pepper. Whisk well until combined. Heat a non-stick skillet over medium heat, add a small amount of butter or oil, then scramble the eggs gently until just set. Remove from the skillet and set aside.
  2. Assemble the quesadilla: Heat the skillet again over medium heat and place one flour tortilla flat in the pan. Evenly sprinkle half of the shredded cheese over the tortilla, then layer the scrambled eggs, cooked bacon or sausage, and diced bell peppers or spinach on top. Add the remaining cheese to help the top tortilla stick.
  3. Cook and flip: Place the second tortilla on top, pressing gently to adhere. Cook for about 3-4 minutes or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula and cook the other side until golden and the cheese inside is melted, about another 3 minutes.
