Ingredients

  • 4 large eggs

  • 4 small flour tortillas

  • 1/2 cup shredded cheddar cheese

  • 1/2 cup cooked beef, crumbled

  • 1/2 cup diced bell peppers (optional)

  • 1/4 cup diced onion (optional)

  • 1/4 cup salsa (optional)

  • 2 tbsp sour cream (optional)

  • Salt and pepper, to taste

  • 1 tbsp butter or oil for cooking

Instructions

  • In a bowl, whisk together the eggs and a pinch of salt and pepper.

  • Heat a skillet over medium heat and melt the butter or oil.

  • Pour in the eggs and cook, stirring occasionally, until scrambled and cooked through, about 3-4 minutes.

  • While the eggs are cooking, warm the tortillas in a separate skillet or microwave until soft.

  • Lay the warm tortillas flat on a clean surface.

  • Evenly divide the scrambled eggs, beef, cheese, bell peppers, and onions among the tortillas.

  • Add salsa and sour cream (if using) to each burrito.

  • Fold in the sides of the tortilla, then roll up the burrito tightly from the bottom to enclose the filling.

  • Heat the filled burrito in a dry skillet for 1-2 minutes per side to lightly brown and crisp the tortilla.
