Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 medium zucchinis, sliced

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup sun-dried tomatoes, chopped

  • 1/4 cup crumbled feta cheese

  • 3 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • 1 lemon, sliced into wedges (for garnish)

  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C) and grease a large baking dish with a little olive oil or cooking spray.

  • Place the chicken breasts in the center of the baking dish. Drizzle with 1 tablespoon of olive oil and sprinkle with salt, pepper, oregano, basil, and garlic powder. Rub the seasoning into the chicken for even coverage.
